Meet the Chef
Chef Ernesto has over 30 years’ experience in the food and restaurant industry. From his childhood he has always loved to cook and eat. Following in his mother’s footsteps, he started preparing specialty dishes at a very young age.
The Culinary Institute of America
His experience is backed by years of education earning credentials from The Culinary Institute of America, Cornell University School of Hotel Administration and various restaurant food service and beverage management certifications. What he enjoys most about managing Café Toscana is coming to the beautiful setting at Ventosa Vineyards, and pairing items with premium wines. His favorite item on the menu is the Pizza Rustica — homemade pizza dough topped with roasted tomato and garlic sauce, roasted red peppers, artichoke hearts, red onion, a blend of Greek olives and feta cheese.
Two of Ernie’s passions are ice carving and Mediterranean cuisine. He has been the chef/manager of Café Toscana at Ventosa Vineyards since April 2007.
