Tasting Notes:

lean and focused pinot noir with good structure. Soft tannins and clean fruit shine through on the palate with a slight spiciness on the finish.

Winemaker Notes:

Picked later to ensure full ripening and appropriate drop in acid.  Fermented with two separate yeast strains and co-inoculated with malolactic bacteria.  Aged exclusively in French oak after primary fermentation and filtered early to sustain structure.

Food Pairing:

Duck, Game Birds, Casseroles, Lentils
